So healthy it hurts (so good) pancakes featuring Chaga
Theres only 275 calories in a serving of these pancakes and 140 in the sauce!!! No dairy, gluten-free. Oh, and the sauce has more antioxidants than 3 lbs. of blueberries thanks to the chaga. #mikedrop ? I made this recipe this morning in 15 minutes, ate it 5 hours ago and am still FULL. OMG it's so good. Like this-really-shouldn't-be-healthy-but-holy-crap-it-is-but-HOW?! good... I also ate it in my bed which I feel is completely necessary when eating these. Peanut butter chaga honey sauce, on fluffy oat pancakes, and a little sprinkled chocolate on top... it was almost too much. Here's what you need to get this in your mouth asap.
Add all the pancake ingredients into a blender and blend until smooth. Add a bit of water to the mixture to thin it out if it's too thick to pour. Heat up a large frying pan with a bit of coconut oil and pour 4 medium sized rounds of batter into the pan. Flip after and couple minutes and remove when golden on both sides. For the sauce, warm up the peanut butter and honey together in a sauce pan or microwave until they're easy to stir. Add the coconut milk and chaga and mix until the chaga is well combined. Add more coconut milk if needed to get to a consistency where you can pour the sauce over the pancakes. Then do it... POUR...THAT...SAUWCE... I chopped up half a square of chocolate and added it on top because... well, no explanation needed. Then crawl back in bed and eat it while taking instagram shots like the one I took above :) Enjoy!
